Thai green curry recipe- – Vegetarian Thai recipes

     I have not really tried making Thai food at home.I have just eaten the pineapple fried rice in the food courts and during a trip to Thailand though always wanted to try it at home because of the flavours in it.. The ready made pastes I have seen in the markets contains shrimp etc. So I never ventured beyond this.

      Recently, I found a packet of ingredients for making the green curry paste in the supermarket. I immediately bought it and made it the very next day. We all just loved it.

     It has so many flavours simialr to Indian cuisine in it which makes the dish really delicious!!!

Ingredients
For the green curry paste
  • 3 - 4 chillies green chillies Thai or green
  • 2 Lemon grass stalks chopped
  • 2 - 3 Kaffir Lime leaves (if dry use soaked in hot water) (optional)
  • 1/2 cup Coriander leaves (use a portion of stalks also)
  • 2 - 3 Shallots (sambar onions)
  • 1 tsp Galangal ginger or fresh root
  • 1 tsp Coriander seeds
  • 1/2 tsp Peppercorns
  • 1/2 tsp Salt
  • 1 tbsp Groundnut / Peanut vegetable oil or any other
  • 2 tbsp Water
For the Curry

For the Curry
Instructions
  1. For the green curry paste,combine all the ingredients for the curry paste in a blender and blend it to a smooth paste.
  2. Cook all the vegetables in a pan adding a 1-2 glasses of water. Cook till it is tender.
  3. Heat oil in a pan.
  4. Add the cashews and fry till golden brown.
  5. Add the green curry paste and saute for 2-3 minutes till the raw smell is gone.
Recipe Notes

Add in the cooked vegetables. Mix well.

Add the coconut milk and vegetable stock. Cook in low flame till it just starts to boil(to prevent splitting of coconut milk.)

I served with plain rice.

Try using fragrant thai rice, jasmine rice or pad thai.
