Tofu and spinach cutlets recipe – Spinach tofu patty for burger/sandwiches

         Holidays have started. Its getting busier day by day as I have to engage the kids in one or the other activity along with managing the household chores.My helper is also out of town. But anyway,  we do have somethings planned for next week and  am eagerly looking forward for it. Will let you all know more about it later. Meanwhile, one of these days, I had made these cutlets. I wanted to make something healthy and also tasty for my kids. They were also bored eating the regular food. But I did not want to serve the usual maggi  which they would have had without any complaints. So I thought of making some vegetable cutlets or bread roll with some healthy vegetable filling.


But I had some tofu, so I thought of using them in  the cutlets. Later incorporated some spinach in it as I do have a stock of greens in my refrigerator always. The ginger, garlic, green chillies and coriander gives a spicy indian touch , though I do not make anything very hot and spicy. So do change the proportions the way you like it.

         I served them to my kids inside a burger bun along with cheese, tomatoes and cucumber. We had them as it is with some tomato ketchup. They were delicious and had a yummy cheesy taste. My son had two of them and it was quite satisfying for me when he asked for a second one.

  • 200 g Tofu /tau kwa
  • 1 bunch Spinach - (cleaned and chopped)
  • 1 small bunch Coriander - (cleaned and chopped)
  • 1 chilly Green - chopped
  • 1 tsp Ginger garlic paste
  • 1 tsp Coriander powder - (heaped)
  • 1 tsp Garam masala
  • to taste Salt
  • 2 - 3 tbsps Maida / corn flour - (may require more or less than the mentioned amount)
  • 1 tbsp Bread crumbs
  • 2 - 3 tbsp Oil - (may require more and less than the mentioned amount)

  • 2 - 3 tbsps Maida / corn flour - (may require more or less than the mentioned amount)
  • 1 tbsp Bread crumbs
  • 2 - 3 tbsp Oil - (may require more and less than the mentioned amount)
Instructions
  1. Drain the water from the tofu.
  2. Press the tofu block with some kitchen towels to squeeze out the excess absorbed water.
  3. Chop into small pieces or crumble the tofu.
  4. Blanch the spinach.
  5. Drain the water completely.
  6. Blend the spinach, coriander leaves,green chilly and tofu into a thick paste.
  7. Alternatively just puree the spinach with some coriander leaves and green chilly and then mix well with the neatly crumbled tofu.
  8. Just ensure that its not too moist.
  9. Heat a teaspoon of oil.
  10. Add ginger garlic paste.
  11. Saute for few seconds and add the tofu spinach mixture.
  12. Add coriander powder,garam masala and salt.
  13. Mix well and saute for around 4-5 minutes.
  14. Add maida and corn flour and mix it well so that it comes together to a thick mass.
  15. You must be able to roll them into a non sticky ball. Switch off the flame and allow the mixture to cool.
  16. Now roll the mixture into lemon sized ball and gently flatten them.
  17. Coat the patty with bread crumbs.
  18. Heat a tawa. When it is sufficiently hot, place a few pattys on it.
  19. Drizzle some oil on the sides and allow them to cook.
  20. When the bottom turns golden brown, flip and cook on the other side till it turns brown.
  21. Remove from the tava.
  22. Serve immediately.
Recipe Notes

Serving suggestions-

1. You can serve them as it is with some green chutney or tomato ketchup.

2. You can place them inside a burger bun along with some lettuce, cucumber and tomatoes.

3. Place them between two bread slice and serve as a sandwich. Pour in some sauces in between too!!

Notes-

1.You can prepare the mixture in advance and keep it in the refrigerator. Make the cutlets when you want to serve.

2. Ensure the mixture is dry and not too moist. Rub some maida or cornflour if its not.
