Tutty Fruity cake

I have always loved cakes and breads containing tutty fruity when I was young. It felt so good nibbling into each of these candied fruits. Now when my baking skills have improved upto some extent and now a serious passion too, I have been looking out for different recipes for cakes, cookies and breads and often spend maximum amount of my time at the baking section of the super market. That is when I found a packet of tutty fruity as its called in India and I bought it immediately. I wanted to try the cakes I had eaten with relish when young. So since then I have been using them in my goodies and made my favourite cake with it.


This cake with tutty fruity was so soft and spongy and tasted just wonderful.

Ingredients
  • 1 cup Self raising flour
  • 3 Eggs
  • 1 cup Canola oil
  • 1 cup Milk
  • 1 cup sugar Granulated
  • 1/2 cup Tutty fruity
  • 1/2 cup apricots Dried - (cut into small pieces)
  • a pinch Yellow colour

  • 1 cup Self raising flour
  • 3 Eggs
  • 1 cup Canola oil
  • 1 cup Milk
  • 1 cup sugar Granulated
  • 1/2 cup Tutty fruity
  • 1/2 cup apricots Dried - (cut into small pieces)
  • a pinch Yellow colour
Instructions
  1. Beat the eggs well. Add the sugar and mix well till a smooth mixture is obtained. Mix in the flour. Add the oil and mix well. Mix the yellow colour in milk. Add it to the mixture. Fold in the tutty fruity and apricots. Mix and pour the batter in a greased cake tin. Bake in a preheated oven at 180c for 35 minutes. Check with a knife or skewer if done.
  2. Cool and slice into pieces.

  2. Me too.. i love the ‘fruit bread’ we get in india with the bits of tutti fruti.. I don’t get tutti fruiti here unfortunately. Must get them from india next time. Looks so tempting.

  3. i use to buy the fruit cake in India as i also loved to eat with those goodies inside..yours looks exactly like the india ones..i also tried to find tutty fruity here in supermarket sometimes..but couldn’t find one:(

  4. I love fruit cakes, i rem in india we use to get britania fruit cakes. they were so tasty. urs look perfect with a cup of tea…..

  6. Looks good sowmya.I like tutty fruity.As a kid,i’ve eaten an ice cream called tuttyfruity flavor icecream…not sure if we still get that in India.Check out my blog on fruit cake on similar lines.Yummy!
