Vegetable brown rice patty – easy wholemeal ideas

My son often has stayback after school on certain days. So I need to pack an extra tiffin box on such days. He hardly gets 15 minutes for eating before the class begins. He eats very slowly and so I usually pack something which can be easily and quickly eaten. Generally I make stuffed parathas and roll it up for him. So for one of these stayback days, I made some wholemeal cutlets.

This recipe involves rice and vegetables and made a quick and proper lunch for my son. They were delicious too. You can add some crumbled paneer or tofu too along with some vegetables. Cooked and mashed spinach can be added. You can wrap this patty in a roti or bread or buns and serve too. Instructions
  1. Cut some potatoes, carrots ,peas,beetroot. Cook till it is soft.
  2. Mash them.
  3. Soak the brown rice for 30-60 minutes. Cook the rice till really soft.
  4. Mix the rice and vegetables
  5. Add the spices mentioned in the ingredients list along with some salt
  6. Tear the bread slices into small pieces and add it to the rice vegetable mix
  7. Knead everything together to form a dough.
  8. Pinch a small portion of the mixture.
  9. Flatten to form a small disc.
  10. Mix maida in a few tablespoons of water. Dip the patties in it.
  11. Roll the disc on some oats flakes.
  12. Heat some oil for deep frying. Drop the disc gently into the hot oil and deep fry till golden brown.
  13. Serve them with tomato ketchup.
